Peanut Butter Balls

These have to be my favorite holiday cookie recipe. They are actually more like truffles since they are not baked. So easy and delicious if you like the combo of chocolate and peanut butter.  Ingredients: One 18 oz. jar of crunchy peanut butter 2 cups of powdered sugar 2 cups of graham cracker crumbs 1/4 cup of melted butter 1 to 2 bags of semi sweet chocolate chips. I like Ghiradelli Mix first four ingredients. Shape into small balls (about 2/3 - 3/4 of an inch in size). Melt chocolate chips (carefully so they don't burn!) in the microwave or over a double boiler. Dip peanut butter balls in chocolate and place on wax paper lined baking sheets.   Refrigerate...

Flourless Chocolate Cake

This recipe is honestly SO easy. It always impresses people, but it is easier to make than brownies.  Mostly fail proof (just don't overbake). Ingredients: 4 oz. fine quality bittersweet chocolate (not unsweetened). I like Ghiradelli.  1 stick (1/2 cup) salted butter 3/4 cup sugar 3 large eggs 1/2 cup unsweetened cocoa powder plus additional for sprinkling 1 pint of whipping cream - whip with hand beater adding a little powdered sugar and vanilla to taste fresh raspberries Preheat oven to 375°F and butter an 8-inch round baking pan. Strawberry Salad with Popovers

I don't know about you, but this unseasonably warm weather has me thinking more about salad and less about roast turkey. I have made versions of this Strawberry Salad for years and my whole family loves it. Serve with super-easy-to-make popovers and flourless chocolate cake (recipe coming soon) for dessert. Salad with Strawberries, Goat Cheese and Glazed Pecans Serves: 4 to 6 Ingredients: 2 tbsp butter 1 cup pecan halves 2 tbsp brown sugar 6 oz baby kale or baby spinach leaves 1½ cups sliced strawberries, stems removed 1 avocado, chopped 1/2 red onion, chopped or thinly sliced 1/2 cup crumbled goat cheese (or feta cheese if desired) homemade balsamic vinaigrette or store bought (I use Marzetti's Simply Dressed Balsamic) Options: grilled...

Black Bean and Salsa Soup

SUPER easy soup! Think about doubling this because your family will devour it. 2 (15 oz.) cans black beans, drained and rinsed 1 1/2 cups vegetable broth 1 cup hot chunky salsa 1 teaspoon ground cumin 4 tablespoons sour cream 2 tablespoons thinly sliced green onion Directions In an electric food processor or blender, combine beans, broth, salsa, and cumin. Blend until fairly smooth. Heat the bean mixture in a saucepan over medium heat until thoroughly heated. Ladle soup into 4 individual bowls, and top each bowl with 1 tablespoon of the sour cream and 1/2 tablespoon green onion.
